It's been a few weeks since I got the informal rejection, but
not had anything in the post yet.
How long does it take? Do I need to follow this up with them?

It might be prudent to do so, but also check your V5C and make
sure the address on it is correct in all detail. We've seen
cases where there was an error, but because the OP had lived
there so long, the postmen all knew him so any slight errors
still got his mail delivered.

So they rejected my appeal and are now allowing me to apply to
the Tribunal.
The rejection letter covers all the points I raised but the
arguments they make are very disputable in my opinion. I really
can't understand how they think they have a fair setup there,
when I triple checked before I parked and still didn't realise I
was in a restricted zone.
So I want to appeal this to tribunal, but not gone through this
process before. Is it all done online? Will they already have
all the evidence I have given and the rejection letter? Or do I
have to completely repeat every argument, photo and evidence to
them again?

No it's not all 'online', but appeals at the Traffic Penalty
Tribunal are virtually all by phone or video nowadays, Check
their website for this: -
HTML https://www.trafficpenaltytribunal.gov.uk/
The council will present an evidence pack that will include your
reps and their response, but you should present your own reps
and evidence updated to reflect and refute what they said in
their letter of rejection.
Never ask for a papers-only adjudication, i.e no hearing.
Experience of this forum is that they tend to be lost because
the adjudicator cannot ask questions on what may be semantics in
your reps, so it all is taken at face value; not good !

Got it, how long do these phone calls / videos take? E.g. are
they an hour long and a one time thing or am I expected to
attend multiple?
What I mean is, can I just reference the evidence already given
and the councils response and provide a reply to each of their
responses as to why I disagree?

Others who attend adjudications as reps will know the average
time for an adjudication, but it is certainly not hours (plural)
! Also it is a one-time event, following which the adjudicator
will decide which party wins. The decision is then sent out and
also recorded on their Statutory Register.
