H Guys,
So ICELAND have not replied as yet, and I'm assuming it's due to
the holiday period. I'll send a third follow-up email to see if
they can cancel it.
Hypothetically, if they do not reply, what are my options?

At this point you can't really do anything. You missed the
appeal deadline. Next step is ignore the debt collectors letters
and wait for a letter of claim. When you get that come back here
for further advice.
