Can they provide witness statements? I can draft them but
obviously they will need to provide their details and they will
need to sign them.
Also, if everyone involved could provide screenshots of the
location history from their phones, that will help corroborate
your version of events.

OP, you're in danger of misleading us.
When you say 'left with friends' do you mean that you took them,
left them, left the restaurant and then....
..or that you took your children to the restaurant as a family,
stayed, had a meal and then left, hence being parked for 2hrs?
Your reference to a venue which could accommodate four families
suggests the latter.
