This is a very interesting question.
I don't think I've ever seen a fluffy pony story in which they
actually THOUGHT with the speech impediment. The most common
approach seems to be that, if you're reading from a Fluffy POV,
the vocabulary reflects the Fluffy perspective ("big white
monster", "boo-boo juice") but doesn't include the standard
Fluffy grammatical errors or mispronounciations. (ie, "you do
not like the big monster" vs "fwuffy no wike big munsta!")
Personally, I think that a story written entirely in Flufftard
would be REALLY hard to read.
I've read some. They're really really hard to understand. And
only new writers make that mistake, so the stories are rarely
worth reading to begin with.
Some people go with a very choppy, simplistic writing style when
writing from a fluffy's POV, which works for them, as it shows
how limited their thinking is.
In my Little Smarty stories, I intentionally tried to keep the
actual dialogue to a minimum for exactly that reason - even
though it's all fluffy perspective, it makes it a bit easier to
understand. (Plus I outright cheat fairly often when forced to
describe something that a fluffy would not understand and might
confuse the author if not clarified: "There's a big white square
thing that hums. Is it a monster? Well, no, it's actually a
refrigerator, but you don't know that because you're a fluffy.")
Yeah, I like when people make it clear what a fluffy's referring
to if it's kind of abstract.

Huh.
I don't think I've ever internally vocalized fluffy pony speech,
so I don't know.

You did it for Cherry, didn't you?
Well, those were narrated thoughts. I didn't actually structure
them into unspoken fluffy pony speech. I think.
