Summer recipes, anyone?

It's only 21°C (69°F) outside, but it feels a lot warmer.
And since I got some beautiful tomatoes from the market, I
decided to try out this recipe for Panzanella, tomato-bread
salad (without the roast vegetables, because it seemed like too
much fuss, plus, why gild the lily?):

Not bad, although I definitely should have put the pieces of
tomato into a colander first, so they'd have lost a bit of the
liquid. As it was, it was more of a tomato soup, albeit a
refreshing one. Also, I used a few spring onions instead of the
shallot and crumbled in about 150 grams of feta cheese.
And now I'll quickly take cover before somebody's Italian
grandmother starts bashing my head in with a serving spoon (for
further mutilation of an already mangled Italian classic). :D
Do let me know if you'd like me to translate the recipe.

It looks delicious...
But we are usually too lazy for it, so...
...we do almost(*) the same ;)
(*) almost = without: Brot, Zucchini, Paprika, Fenchelknolle,
Kapern, Backofen, Backblech, Strom, Zeit(**)

This is not exactly a recipe but dad and I love tortilla wraps
because they're so light and versatile. The Czech cuisine can be
very hearty and filling so it's nice to take a break from it,
especially in the summer. I cut chicken thigh fillets into big
chunks and fry with thick slices of onions, add spices like
paprika, chilli flakes, ground cumin, garlic powder etc., then
serve in a wrap with iceberg lettuce, tomatoes, jalapeno peppers
or gherkins and either sour cream or some ready-made sauce.
Instead of chicken, we sometimes cut up leftover meatloaf,
burger or schnitzel.
We also enjoy Chef Salad, most people will probably know it. It
has ham, eggs, cheese and Thousand Island dressing in it.

To those who learn Italian I recommend chef Luca Pappagallo, his
recipes are absolutely delicious and simple and he likes to talk
a lot.
Here the recipe I tried yesterday, sliced vegetables cooked in
the oven. 5 mm thin. Less oil than Luca suggests, about 50
minutes 200 degrees

I just discovered how to make the easiest and summeriest thing
ever...
Get some frozen mango (very cheap from Aldi, for anyone in
Europe), add a splash of fruit juice - and other fruit, like
raspberries, if you want - and blend it. That's it.
I realised that if you do that, you end up with instant sorbet!
Easy peasy and ridiculously healthy. Zero fat and no added
sugar, yet it feels like a creamy treat. Put in a pretty glass
bowl and enjoy! What's not to like?

Great recipe. I had 12 persons for an early dinner barbecue and
it was an excellent idea. I added some cream (only 25 % fat) no
extra sugar. Just delicious.

Sofia, I just watched the video you linked to, and am wondering
what he adds at the end, after he's taken the gratin out of the
oven - unlike the rest, it's not self-explanatory, and I can't
understand what he says, either. Could you explain, please?

It wasn't really a recipe - just a chance discovery. But I'm so

He says it is his "little secret" it looks like he adds a
vinegarette dressing but I cannot understand all of the
vocabulary.

The recipe is:
Slice the veggies 5 mm put some oil on it. Put them in the oven
(200 degrees) during an hour.
He first said 20 minutes but then says an hour. Frankly 200
degrees is a bit high, I rather would put them at 180 and check
after half an hour.
It depends on your oven. This morning I tried 2 kilos of sliced
red Peperoni I almost burned them, though they were absolutely
sweet and delicious.
