Last night it was cheese crisps. Nothing too fancy.
Heat a griddle or skillet; meanwhile, grate some cheese. (I
cheated and opened a bag of pre-shredded blended cheese.) Once
the cookware is hot lay a tortilla on it, sprinkle it with
cheese and, optionally, fold the tortilla. Cook on that side
until the smell of toasting tortilla fills the kitchen, then
turn and toast the other side. Plate and serve.
       OPTIONS:
Sprinkle the cheese with a little onion powder, chili powder,
garlic powder, cumin, tarragon, or sage.
Make some taco meat using a package of spice mix. Your choice
whether you crumble the meat or just chop it into chunks and
brown it that way. Spoon the spiced meat onto tortilla before
folding. Serve with rice, refried beans, pico de gallo, sour
       cream, and salsa.
A small cheese crisp can be cooked in a microwave. Keep a sharp
       eye on it.

We had the Island version of hamburger helper without the store
bought helper box . Brown and drain 1,2 or the lbs. of hamburger
needed to feed the gang, season with salt and pepper. Add the
same amount of cream of mushroom 10.5 oz cans ( 2 lbs. = 2 cans
) simmer for 15 minutes, sprinkle with shredded cheese and enjoy
as a sloppy joe or with some tortilla dipping chips .
