My family and I are planning to go next summer for a max of a
week. From past experience, how much did it cost you?

You definitely do not need a week to do WWoHP or Universal for
that matter. It took us maybe 2 hours to do all of WWoHP. I
guess strictly for a day in the park you need to factor in park
tickets, lunch/snacks, and merchandise. It was $30 for two
souvenir mugs of butterbeer (the regular cups are obviously
cheaper), the park tickets are $80-90(I think - it's seasonal),
and while we opted to eat back at our resort, lunch in the park
would have run us around $30 for two people. I spent $45 on
souvenirs. None of this incudes water. So about $220 - $300
depending on souvenirs and lunch for two people for half a day.
That was for half a day at Islands of Adventure. If you're
staying at a Universal Resort and buy a multi-day ticket it's
going to cost you less per day (the longer you stay the less you
pay per day for tickets), but you're still going to be
overpaying for meals.
I will say that a week may be a bit excessive for just
Universal. IOA is very small (and WWoHP is tiny).
If you want an idea of how much it costs at an Orlando theme
park for an entire week I'd say it'll run you between $2000 at
the low end to $5,000 on the high end (again prices for two
people). It depends on what type of package you have and where
you stay.
None of this includes plane tickets.
