Moo's Creme Brule

Creme Brulee

4 cups heavy cream
1 vanilla bean
8 egg yolks
pinch of kosher salt
3/4 cup + 2 Tbsp. sugar
8 Tbsp. turbinado sugar (sugar in the raw) OR brown sugar
Preheat oven to 300 degrees. Place 8 ramekins in a pan large
enough to hold them.
Halve the vanilla bean and scrape out the caviar. Combine the
cream, vanilla bean and caviar, and salt in a heavy pan and warm
for 5 minutes, stirring constantly. Combine yolks and sugar and
pour into hot cream and whisk. Strain into a pitcher and pour
into ramekins up to the rim.
Pour warm water into the pan, halfway up on ramekins and bake 1
1/4 hours. Remove and cool.
When completely cool. Top each creme brulee with 1 Tbsp of
turbinado sugar or brown sugar and evenly distribute. Caramelize
with either a torch or by placing under the broiler.
