       Spanish Tortilla

       5 eggs (beaten, I add  half and half and salt and pepper)
       3 decent sized white potatoes
       onion, chopped
       olive oil or oil of choice
       Slice the potatoes.  If using new potatoes they do not need to
       be peeled.  Cook over low heat till fork tender but not
       necessarily browned.  Beat eggs as you would for scrambled eggs,
       add salt, pepper and half n half and pour over the potatoes.
       Cook until eggs are setting up.  Originally I made a family
       sized version and used a plate to turn the tortilla over but
       since I only cook for myself now I tend to cheat on the flipping
       of the dish.
       I have served this with a salad
