       Bacon Corn Chowder

       CORN CHOWDER

       1# bacon, cut up and fried crisp, reserve
       1 cup chopped onions
       1/2 cup chopped celery
       3-4 cups finely diced potatoes
       1 box chicken stock
       salt and pepper to taste
       1 cup light cream
       1 (16oz) package frozen sweet corn, or more! ;)
       In a 3 quart saucepan, cook bacon until crispy. Remove and
       crumble bacon and set aside. Add onions to bacon grease and
       saute until tender. Add celery, potatoes, stock salt and pepper.
       Simmer until vegetables are tender. Add corn, you want entry.
       Add the cream to the soup and simmer until thickened. I dish up
       the chowder and just sprinkle bacon over top. Put the rest in a
       bag in fridge for the next serving!
