Cheeseburger Soup

This was in the Kansas State 4-H cookbook. A blue-ribbon winner
at a local county fair.
Cheeseburger Soup
1# ground beef
3/4 cup onion, diced
3/4 cup carrots, shredded
3/4 cup celery, fine dice
1 tsp. dried basil
1 tsp. dried parsley
4 Tbsp. butter, divided
3 cups chicken or beef broth
4 cups potatoes, peeled and diced
1/4 cup flour
2 cups Velveeta, cubed
1 1/2 cups milk
3/4 tsp. salt
1/2 tsp. pepper
1/4 cup sour cream (optional)
In a 3 quart saucepan, brown the ground beef. Drain any fat. Add
1 Tbsp. butter along with the onion, carrots, and celery. Saute
until tender, about 10 minutes. Add the basil and parsley, along
with the broth and potatoes. Bring to a boil. Reduce heat; cover
and simmer until potatoes are tender.
In a small skillet, melt the remaining butter; add the flour and
cook until bubbly. Add to the soup and cook for 2 minutes.
Reduce the heat to low. Add the cheese, milk, salt and pepper.
Cook and stir until the cheese melts. Taste for seasonings.
Remove from heat and blend in the sour cream if desired. Or just
add a dollop to each individual bowl.
