       Plaza III Steak Soup

       Plaza III Steak Soup
       (This recipe is from the Plaza III restaurant on the Country
       Club Plaza in Kansas City, Mo. It is legendary and delicious!)
       1 ½# ground beef, browned
       1 stick butter
       1 cup flour
       1 cup each carrots, onions and celery (parboil)
       2 cups frozen mixed vegetables
       1 16-oz. can tomatoes
       Button mushrooms, sliced -- to taste
       1-2 small zucchini, sliced
       3-4 beef bouillon cubes
       (or beef broth, then adjust water accordingly)
       1 Tbsp. salt and pepper
       1 Tbs. kitchen bouquet
       8 cups water
       Make a paste of the butter and flour. Place in a large pot. Add
       the
       water slowly, whisking to insure no lumps form. (Be sure to use
       the
       cooking liquid drained from the carrot/onion/celery parboil.)
       Add
       ground beef and remaining ingredients. Simmer for 3-4 hours. It
       just
       gets better with more cooking time.
       Last time I made it, I sauteed the zucchini and mushrooms
       separately. I also added another pkg of frozen corn and of peas.
       Yummy!
