       Cranberry Orange Scones

       4 cups flour
       4 tsp. bkg. pwd.
       3/4 cup of sugar
       1 tsp. salt
       zest of one orange
       1 cup room temp. butter, cut into pieces
       2 large egg
       1/3 cup frozen orange juice concentrate
       1/3 cup milk
       3/4-1 cup fresh or frozen cranberries (sometimes I add more)
       Combine the four, bkg. pwd., sugar and salt. Add the orange
       peel; cut in the butter until the mixture resembles coarse sand.
       In a small bowl, whisk the eggs, orange juice and milk. (I save
       a couple Tbsp. of this to brush the tops of scones before
       baking.) Stir into flour mixture until the dough is moist, do
       not overmix. You can add a bit more flour if the mixture is too
       sticky. Add the cranberries.
       Turn the dough onto a floured surface and knead a couple of
       times. Divide the dough into 2 equal balls. Pat each ball into a
       circle. Cut 6 wedges from each one. I generaly do not cut all
       the way through. Brush with the reserved egg mixture.
       Put on greased cookie sheets and bake at 375 degrees for 20-25
       minutes or until they are golden brown.
       You may also glaze these with a mixture of 1/2 cup powdered
       sugar mixed with 1 Tbsp. frozen orange juice concentrate
       Drizzle over the cooled scones.
