       Chicken Salad

       Chicken Salad ~ Ina Garten’s
       1 1/2 pounds of chicken breasts (2-3)
       Olive Oil
       Salt and black pepper
       1/2 cup pecan pieces
       1/2 cup walnut pieces
       1/2 cup mayonnaise
       1/2 cup sour cream (I use fat free)
       1 TBS fresh tarragon leaves (I use dried)
       1 cup green grapes
       Preheat oven to 350º
       Place chicken breasts on a baking sheet. Rub with olive oil then
       sprinkle with salt and pepper. Roast for 35-40 minutes or until
       the chicken is cooked through.  Set aside to cool.
       When chicken is cool remove bones (I use boneless). Cut the
       chicken into bite size pieces.
       Place the walnuts and pecans on a sheet pan and toast. Set aside
       to cool.
       Dressing:
       Mix together mayonnaise, sour cream, 2 tsp salt and 1/2 tsp
       pepper. Stir in tarragon leaves.
       Mix the chicken, nuts, grapes and dressing in a bowl. Serve on
       lettuce leaf or in a sandwich.
