Chicken Marsala (from the old board)

From the old board. Shared by Cocoapuffs.
Chicken Marsala
by cocoapuffs
1 to 1.5 lbs chicken breast (boneless, skinless , rinsed). If
you choose dredge in flour and pepper.
1/4 c butter
1 c. dry Marsala wine
1/2 c. Chicken Stock (I used reduced sodium)
1 cup sliced , fresh mushrooms
4 TBSP. chopped shallots
***I think this is key: Flatten chicken breasts to about 3/8 "
thick.***
Dredge in flour and pepper. Put butter in skillet and heat on
med-low. Brown breasts until golden brown. Add shallots and
mushrooms, saute for 1 minute. Add 2-3 TBSP flour stirring to
blend. Stir in Marsala and chicken stock to skillet and boil
liquid 1-2 mins. until slightly thickened. Loosen all browned
fragments that cling to pan. Serve.
