       Pineapple Casserole

       Pineapple Casserole
       1 can (20 oz.) pineapple chunks with juice
       1 can (20 oz.) crushed pineapple with juice
       1 ½ cups shredded cheddar cheese
       1/3 cup plain flour
       2/3 cup brown sugar
       ¼ cup butter, melted
       1 ½ to 2 cups crushed Ritz crackers
       Combine sugar, flour and juice from pineapple, mixing until
       smooth. Add pineapple, cheese, stirring to mix all.
       Combine cracker crumbs and melted butter, making sure crumbs are
       well coated.
       Pour fruit mix into 8” x 8’’ buttered square dish.  Bake for 30
       minutes at 350. Top with buttered crumbs bake for an additional
       10 - 15 mins.
       I have discovered over the years that with most Ritz topped
       casseroles that you really dont need to butter the crumbs. Your
       choice!
