       Butter Chicken

       Butter Chicken
       1 yellow onion, chopped
       2 or 3 chicken breast cut into bitesized pieces
       1 green chili (jalapeno) diced fine
       1 tbls curry powder
       1/2 tsp ginger
       1/2 tbls garlic
       1/2 tsp paprika
       1 cup tomato sauce
       1 cup chicken broth
       1 cup half and half (you can use a bit less)
       salt
       3 tbsp butter
       cayenne pepper if desired
       Fry onion in butter until golden brown. Add the curry, ginger,
       and the paprika to the onions. Stirring for a moment. Add the
       chicken and stir, then add the salt, tomato sauce and chicken
       broth. Cover and let simmer for 30 minutes. Pot will have
       reduced somewhat, now add the cream and simmer for an additional
       20 minutes. Serve with white rice and Naan if you can find it in
       your market.
       DH like this served with Mint Jelly and I like to serve Chutney
       on the side for mine.
