       Meems Ground Beef and Potato Casserole

       Meems Ground Beef and Potato Casserole
       1 lb. hamburger meat
       1 can cream of mushroom soup
       2 to 3 baking potatoes, thinly sliced and parboil for 5-6
       minutes, then drain
       1 onion, thinly sliced
       Salt and pepper
       Prepare a 9x9 casserole baking dish with cooking spray. Crumble
       hamburger meat and cook until browned, adding onions and
       stirring in soup and a little milk. Only estimate, but spoon
       about half of meat mixture, then a layer of potatoes, then
       remaining meat mixture. Bake at 350 degrees for 30-40 minutes.
       Can top with shredded cheese. Bake uncovered at same temperature
       for another 15 minutes.
