I know the norm is to have a 1, 2 or 3 year contract, but does
anyone know of any longer deals? And is there any reaso why we
wouldn't want to get, say, Marcus on a 5 year deal?

To be honest, I doubt that would cut all that much mustard with
a bank, and PRL isn't awash with cash - it's just the
co-ordinating body for the clubs, so its only funding comes from
the clubs (even though it administers things like RFU, tv and
CVC payments, it's really just sharing them out to the clubs)

The reason for fixed term deals being the norm is that the club
doesn't know in advance what a player's value might be in 3
years' time. Jack Clifford at 20 or 21 looked like a future
England captain (and COS said as much), but 3 years later his
shoulder troubles has already set in. Chris Robshaw at the same
age was, IIRC, going through a long run of injuries and might
have looked liek a risky bet.
That said, there's no reason why a player and a club couldn't
agree an open-ended contract that sets out what they would be
paid based on key milestons, number of games for the club etc.
You'd probably only want to do it for the most important
players, and you'd still probably include breakpoints and
renegotiation windows, but it's possible.

My understanding is that player contracts are standardised.
Until the term and the value are different.
So - I am not sure there is any option to do enything special
e.g. pay based on milestones, etc.

Also, in a sport with promotion and relegation, no club knows
for certain which league they will be playing in after three
seasons.
Hang on, I see a flaw in this logic.

When the Orange money came in, Sale signed a load of their
academy kids up immediately. I believe that the Currys were put
on 5-year deals.

This makes sense, although one could argue that their value
might chance over the course of a season. And injuries are an
issue that can be indemnified against with insurance. I think
for a small number of players there's a good case for signing
them up for 5 years maybe, as that gives the club the chance to
build a team around them.
I wonder if there's any prospect of a football type situation
where players are bought and sold. I hope not.

Clubs already receive a transfer fee for players who move before
their contract ends.

That formed part of my thinking. Securing a long contract would
potentially be a good investment for a club.
