The defending team doesn't need to bring down a successful choke
tackle, the ball can't be released so even if it stays up its
their put in. If it collapses it's because up until the point
the ref calls maul the attacking team have been trying to bring
it to ground to make it a completed tackle. So when maul is
called the defenders can let them drop it.
There's no benefit to the defending team collapsing a choke
       tackle.

       Think I'm right here.
If the defending team collapse a maul it's a penalty to the
       attacking team.
If the attacking team collapse it then the defending team get
the scrum put in if the ball is not playable. If the the maul is
stationary for a period of time (ref's discretion) the defending
team get's the scrum put in.

You can’t. Not sure where you’ve got that from.

The team with the ball will usually take it to ground.
Basically, if you stay on your feet, then it is a scrum to the
       other team.
But, if you take it to ground AND you get the ball into a
playable position, then it is a ruck and play on.
Otherwise - it is a scrum to the other team as well. (Unplayable
       ball and not going forward.)
Your only other option is to pile bodies in and to keep the ball
moving forward and hope that you can smuggle the ball to the
       back of the maul.

There is - if the maul formed from it is still moving forward,
or there's a risk that the ball will become playable.
T-Bone isn't wrong, by the letter of the law the defenders are
not allowed to collapse the maul formed by a choke tackle but
it's allowed far more often than a normal maul.

Quite. For some reason we've normalised that a choke tackle is a
kind of maul where the defenders get extra benefits. I would
like to see refs enforce the maul laws more strictly. It's still
a tackle until a second attacker joins, if the ball carrier can
get a knee to the ground it's a ruck and if the defenders take
       it down it's a penalty.

2 defenders and one ball carrier is not a tackle until the the
ball-carrier has been brought to ground and it isn't a maul
       either.

It's not a completed tackle, but it's a tackle in progress - you
will sometimes hear refs shouting "Tackle only!" to distinguish
       it from a maul

It's a tricky one, though, because in a choke tackle situation
the one person you can guarantee is trying to get to ground is
the ball carrier, which is legal.

At the Richmond game on Saturday, Lennox Anyanwu had a good line
       break.
But, 2 Hartpury players did a choke tackle on him.
As it was a good line break, there wasn't any Richmond player
around to bind. So, Lenny got pushed back around 10 yards (maybe
       more).
Then, when he did finally get his knee down, the Hartpury
players were in a perfect position to jackal and forced a
       penalty.
So, your options are, bind with the player and stop him being
forced back and possibly give away a scrum.
Or, give away a penalty 10 yards back towards your own tryline.
