Dorn's 'different kind of undead' for some reason led me to
think of a 'Shade'. So that is my guess.

A ghost? The line about death makes me think the thing isn't
alive... and ghosts are see-through, thus would change color
depending on the lighting. I think.

       Closer, but no cigar.
       Once bending sunbeams,
       Now wielding shadow,
       Savoring the screams
       Torn from friend and foe.
       Protector no more,
       Monster immortal,
       His sick, lifeless core
       Begs for death's cordial.

Is the poem a hint, or a new riddle? Either way, new answer is
       'Lich.'

It's an extension to my other one. Hoping to give a better idea.
       :)
Lich would be incorrect, but getting closer.
       Protector no more, monster immortal...

Deathknight. I was thinking undead paladin, then remembered
them... and IIRC, they do want to die, but are immortal.

You know, I thought of that and went 'Nah. Couldn't be.' Next
time I don't go against my gut.

Alrighty, I've a riddle for you guys! Hopefully it won't be
-too- easy, and yet still sense-making, since ish made up this
       one as well. :3
       Coat of metal,
       Voice winds resemble,
       Eye of tree petal,
       Packs to assemble.
       Good luck!
