I kinda like contrary as an answer xD But nope! Azan has the
correct three letters, though. Remember, the last lines are a
hint as well.
My first is third, though it's hard to believe.

random stab at "compare", if only because the first four letters
seem likely to be c, o, m and p, and that, if you put two things
together, you can gain a greater understanding of both. Totally
stumped otherwise, though xD

Sunrise and Sunset could mean time = Watch.
Warm and Cold = thermometer
So maybe the third in line is a device on which you can check
direction :P

Congratz! Sunrise, Sunset, Warm, and Cold all represent East,
West, South, and North respectively (for the northern
hemisphere, Southern hemisphere would be East, West, North,
South).
The entire riddle is:
My first is third, though its hard to believe (C is the third
letter of the alphabet)
My second marks the middle of you, not me.
My third belongs in a hymn, not a tune.
My fourth forms a planet, not sun, stars or moon.
My fifth's not in lentils, but is in beans.
My sixth and seventh are common, (one of the most common letters
in the English alphabet)
But still seldom seen.
Sunrise and Sunset, Warm and cold.
Put them together, a sign will unfold.
