Is it a Dummy?
It serves its master by being either attacked or used to
simulate carcrashes. (Crashtest dummies :P)
and once the outside is broken or too damaged it will get
replaced by another on like it (Hence the dresses that are all
the same)

I'm gonna combine Star's first answer with mine.
Is it a mannequin?
It's broken appart so the clothes are easier to put on.
And a mannequin can wear many dresses.

Hmmm... Again you are close, but not quite.
To put simply, know that mannequins are not maimed while in use,
they are whole. The answer you seek is both at the same time.

y'know... because the dolls exists out of different pieces of
cloth sewed together :P (AKA The cloth is maimed but forms a
whole :P)

A Mr. Potato head toy thing? They have all sorts of different
parts to add on/take off, so they're constantly missing an arm
or leg.
