       I'm a wop by birth .Half anyway .
       I'm Japanese and Brit by ..no idea ..

       I just cook up Italian style sude dish mushrooms .
       Basically clean em ,cut em up .
       I always wing the amounts .I'll buy maybe an 8th of a lb of each
       kind .
       I got to whole foods .
       I'll make a list .
       You can do it with just garden variety ,but I prefer to get
       decadent when I do it .
       They Cook way down ,so a lb of shrooms really isnt overwhelming
       .
       So first ,thinly slice up a medium to large onion .
       Use a large deep non stick pan .
       I cook em up in some good non GMO veggie oil .I may add a pat of
       butter .
       Once they get translucent ,add hmm...4 decent sized sliced up
       cloves of garlic .
       Saute that nice over low to med heat .Salt pepper .
       Now I don't do alot herbs with this , but its,subject to
       interpretation .
       At most I'll add some finely chopped italian parsley,and top
       with a pinch of finely chopped wild chives just to serve .
       If you're into rosemary and sage ,go for it .I'm not .
       So you then dump the shrooms in there .
       MiX it all up ,and pour some hot beef stock in there .a glug
       glugs worth .
       Cover ,lower heat .let it simmer .
       Stir frequently .
       You can do this with water .For the shrooms as a side dish
       ,water .
       For the Soup ,I use beef stock .
       Add more as it boils off .
       Add more salt and pepper to taste .
       Once the mushrooms have greatly reduced ,take them off the heat
       so they don't burn .
       You want some juices at the bottom .
       I then just dump it all into a deep pot .
       Deglaze the pan with a bit of hot water ,dump that into the pot
       too .
       Here is where its all to taste .
       You dont want it Too creamy ,so I'll add half a cup of beef
       stock ,then I slowly alternate adding milk and cream .
       Stir continuously .
       Light cream is good .Heavy cream I use, again ,just to top it
       off with a squiggle fur serving .
       I add the milk and cream until you have a good quart,quart plus
       of liquid .
       I just basically do it to taste .
       More salt pepper if needed ,chopped up parsley .
       You can do all cream ,but its soooooo fattening :chuckle:
       Its best on a cold night .
       If you want to do it with all stock ,no cream ,I'm guessing you
       could ,and make it more like a mushroom Consommé

       Oh I'll definitely use some heavy whipping cream.
       I'm going to bookmark, let you know what I stole and experiment.
       Probably use olive oil instead of veggie.

       I use olive oil and veggie oil for very specific things .
       Peanut and sesame oils as well . They Are strictly Asian cooking
       .
       Veggie is when I want lighter .
       But non GMO is a must .
       Olive oil I use in most of my Italian sauce dishes . a,few
       others .
       Im just ocd about it ..

       I've always loved cooking, but when I was young I would make
       these Taco Bell breakfast snacks. I would go to Taco Bell and
       get a bunch of tacos and eat some of them. I would take the
       remaining tacos and toss the lettuce and pull the "meat" and
       "cheese" out of the shell and put it in the fridge along with
       the empty shells. The next morning, I would take the filling and
       heat it up adding several eggs. I would then steam the shells
       and put the filling in.
       It was freakin deelish.
