Thanks for all the suggestions - I hadn’t thought of the
rotisserie chicken. I think that and sandwich fixings should be
a good start and I’ll see about some of the other items as well
while I shop. I did try asking what they’d like, but they just
said they’d eat anything (not true) and wouldn’t give any
specifics. I just need enough that I won’t get lectured about
the state of my fridge. I get stressed about there visits in
general so this was just one more thing that was weighing on my
mind. This was a big help, thank you!

Based on this, I'd have mustard, mayonnaise, pickles, some
cheeses, eggs, yogurts, a rotisserie chicken, a bagged salad
mix, cream cheese & some canadian bacon in the fridge. In the
pantry, I'd have some english muffins (breakfast or lunch), some
crackers, and some high end soups. I'd buy some frozen soup
(depending on where you are... either a good clam chowder or a
gumbo) and a high quality pasta dinner. I'd also have some
apples and bananas available. Any of these things that didn't
get eaten over the visit could either be frozen or would last a
month or so till you want to eat them.

You're getting a lot of good suggestions here. I'd like to add:
A bowl of fresh fruit (apples, bananas, oranges) along with some
breakfast bars or granola bars, maybe a can of mixed nuts that
will be left out on the counter/table for easy accessible
snackables.
What about cereal and milk for breakfasts when you won't be
there so they don't have to cook?
