I am having a difficult time understanding how these jello cakes
would taste. Is the point to have alcohol in the cake? If it
were me, I would want rum in a chocolate cake rather than a
jello cake of any flavor. Jello and cake do not "go together" in
       my mind at all!

Correct me if I'm remembering wrong, but I don't believe the OP
has a working oven so she can't bake.
As for Jello and cake combo, I've never had what the OP is
describing, but Jello and cake (made with flour) is surprisingly
good. There's a bakery that makes black forest cake with small
diced black cherry Jello between the layers. I like the contrast
of the different textures and the "cool" temperature of the
       Jello.

But it's not really a cake. Looking at the recipe and the
pictures, it's more of a pie. There's a crust, filled with Cool
Whip that's flavored with Jello, and with squares of Jello
folded into the Cool Whip. The alcohol is used in making the
Jello so the squares are alcoholic. I'm not sure it's possible
to make a cake that uses that much liquid, and even if you did,
baking the cake would mean that some of the alcohol would
evaporate, which isn't the case with this dessert. She said
that she warns people that eating a slice of it is equivalent to
drinking an once of vodka. it sounds really interesting!

The 1962 cookbook describes this as "Broken Window Glass Cake"
and the photo linked to in the OP shows two versions of it. One
has ladyfingers as the base and the other has a graham cracker
crust on the bottom. That version was done in a spring-form
cake pan with wax paper lining. I did that a long time ago for
Brunhilde but with no booze (as her husband is an alcoholic).
Technically it is more like a pie.
As for what it tastes like, think of adding the flavor of vodka
to the individual Jello flavors. The only heat used in the
preparation is to boil the small amount of water used to
dissolve the powder (which is why I recommend the sugar-free
version). Hence, the pie will taste like a cocktail. There is
       no baking involved.
Based on the fact that substituting vodka for half of the water
usually needed to make Jello still results in it getting to the
same texture it would be possible to do this dessert, known as
       Rainbow Cake:
  HTML https://i1.wp.com/clickamericana.com/wp-content/uploads/Rainbow-cake-recipe-Jello.jpg?fit=1555%2C907&ssl=1
To achieve that you need to use an electric mixer on thickened
Jello until it doubles in volume. Nothing else added. I did
this twice witih no vodka and it definitely needs a certain
level of patience. It's a real Martha Stuart project, as you
need to be home the whole day to accomplish this.
BTW, the bottom layer was "Black Raspberry", which I don't think
       they make anymore.

       Now for the questions:
Had this not been her birthday party, was it rude of her to make
this request? Am I being an egotistical rhymes-with-witch for
my disappointment at not being able to make a more colorful
version of this for my photoshoot?
       [/quote]
As other posters (and you, yourself) said that since it was her
birthday she was not rude to request a change.
As far as being an egotistical witch? I don't think you are at
all. A moments disappointment does not a witch make. It's
natural to feel a bit disgruntled when someone asks you to
change up something that you're proud of. But you stepped up to
the plate and are willing to make the requested change. Good for
       you!
I'm sure bday girl and other guests will gush just as many
praises that they have in the past for a wonderful, successful
       dessert.
And please let me know when you're making the grasshopper and/or
the orange/Grand Marnier version of the pie. I'll be there on
your doorstep with plate and fork in hand. <-- oh, wait, that
was probably rude of me, wasn't it.[emoji2]

I don't understand why ALL of them have to be non-citrus. She's
not going to eat all of them, right? I'm sure ther guests will
       enjoy the citrus pies.

I think it has to do with the amount of jello that goes into
each pie, and the desire to use 4 different flavors (colors) so
the pies look super colorful. There would be lots of leftover
jello or less colorful pies if OP used different jello flavors
       in each pie.

Both Rainbow Cake and Broken Glass cake look fabulous.
As someone who has wine but nothing harder in the house----is
there a link to a non alcoholic version of the broken window
       confection?

Just substitute the amount of vodka used with ice water as would
normally be used for making Jello.

I once made the black cherry flavor using 8 oz of Cherry Kijafa
wine instead of the cold water. It was lovely.
