I think it’s ok, as long as people know to expect
only snack food.
Just to say: "snack food" clearly has quite different meanings
on either side of the Atlantic. Over here in Rightpondia, if
it's something you need a plate and a fork to eat, such as the
pasta, meatballs, macaroni cheese etc that have been mentioned,
there's no way anyone would call that 'snacks': that's clearly a
meal, and we'd call it a buffet (a 'fork buffet', if we wanted
to be specific). 'Snacks' to us means canapés, crisps-and-dips,
olives and nuts, maybe teeny sandwiches, that kind of thing.

The OP is planning on cheese, fruit and veggie platters which
are "snacks" to me. Then there's meatballs, shrimp, and pasta
which are more like "appetizers" than snacks. They're finger
foods and not a full meal, but hardier than "snacks."
I'm not sure what to call such a menu. Saying "snacks will be
served at the reception" will make me think they are serving
chips/dips, nuts, crackers/cheese, etc. But "appetizers" make me
think there will be more variety of heavy apps than meatballs
and shrimp. If the OP decide on the deli platter, maybe "light
luncheon" or "light buffet?"
Interesting and fun discussion.

How about calling it "heavy appetizers?"

I think Rose Red's suggestion of "light buffet" is good.

I agree that "snack" has a lot of different connotations. I
might be annoyed to be asked to a 1 pm wedding (which means I'll
probably be on the road by 11:30 or earlier to be sure I get
there on time) if the most I get afterwards is two celery sticks
and a handful of pretzels. At best, I'll probably be leaving
relatively quickly to get something to eat before my blood sugar
drops enough to turn me into that Guest You Really Don't Want.
Of course, perhaps that's the overall plan, but if the hosts
expect people to stay all afternoon celebrating, it may dampen
their enjoyment a bit.
However, when I hear things like pasta and meatballs, that's no
longer what I call snacks, that's a light lunch, and perfectly
fine.
