Hello everyone, Op here.
The wedding is going to be casual, hopefully, the ceremony
outside and the reception right after with tables and seating in
the cabin and little TV tables and chairs scattered on the 3
sided deck overlooking the mountains and some out in the yard. I
am planning on having at least 100 chairs, (renting them) for
people to sit on. Everyone, except one couple, will be local or
staying right on site, no one will have to travel more than 20
minutes. The two things I insisted on was indoor plumbing and
electricity; we and our friends are in our 50's and 60's and a
few have some disability, so no mountain tops or rustic meadows
for us.
We are catering this affair ourselves, and want to keep it
simple and other than maybe asking a very good friend to change
out the platters for a fresh one, and someone to help cut the
cake, I want everyone to mingle.
Thank you for the suggestions, keep any and all ideas coming.
I would worry about running out of plates if I didn't have way
more than enough and as one poster stated, they won't go bad. We
can use them again the day after as this will be a family
reunion for both sides to meet each other

Yes, at my age an abundance of chairs and access to a table is
actually more important than the quantity of food offered. It
is obvious you are being very thoughtful and gracious hosts,
really doing everything possible to make your guests
comfortable.
I know your wedding is going to be wonderful and lovely! A
beautiful and memorable occasion for all.

I don't know how casual you want to be, but my friend was at a
similar sounding style wedding last year. Instead of the
traditional wedding cake, the couple had a cupcake wedding cake.
It was super cute and the guest loved it because there was such
a variety of flavors. The top tier is a traditional wedding cake
that the couple cuts, with the remaining layers a lovely spread
of whatever kind of cupcakes you want. If you google cupcake
wedding cake, you get an interesting spread.

This sounds awesome! What a beautiful setting for a wedding.
Your menu sounds great to me, so long as there is plenty and the
trays are replenished. The mac&cheese and meatballs sounds like
a nice substantial entree for a lunch instead of just snacks. Do
you plan on having more than one crock pot each? I do like the
thought of putting out some mini bread rolls for sandwiches.
Instead of paper plates I'd like to suggest something like this:

For a 1pm wedding that will have the reception over with by 6pm,
I would just expect light snacks. I'm very capable of providing
my own meal prior and being able to dress and arrive at location
by 12:30 in time for the wedding. I honestly wouldn't want to be
fed a lunch as I would assume that that meal probably wouldn't
commence till 2pm and would prefer light snacks. My suggestion
is to state on the invitation that "A cocktail and hor d'oeuvres
reception to follow the ceremony". That way people can decide to
have a hearty breakfast or a light lunch prior to arrival.
I do agree with you that I would do at least 2 dinner plates per
person and 2 dessert plates. I like the ones you've selected.

Your menu would be a meal for me! Maaaybe add white juice for
the children to drink. The last few years I've noticed colas are
less popular. Perhaps chips or loaves of (not sandwich) bread
for guests to cut to size. Let me be grumpy and suggest the mac
& cheese not be runny.
