I thought it was funny when the entitled woman claimed that they
were breaking the law by filming her and they responded that
it's against the law to harass or deliberately distract a
service animal!

That woman screwed up a HUGE teaching moment for her daughter,
by doing that. She instead, is going to raise an entitled brat,
just like her.

This is exactly what I was going to say. Her feelings were hurt
that these individuals did not let her precious child pet the
puppy. What if this was outside and was told no because the dog
tended to nip at small children? Someone should have told the
parent "no" as a child.
If I were her I would have just said "Oh I didn't realize they
were training! How great for you to take that on.". Maybe strike
up a positive conversation for the child to witness. All she
taught her child is that you should get mad when you don't get
your way.

Cucumber video that's suggested after the main video ends?
Hilarious!
Back on track -- I'm really curious as to the aftermath. She
goes out to call her lawyer? Police? What happened next?

Hopefully what happened next is her lawyer told her it was
indeed illegal to pester a service animal and
also that she has no right or expectation of privacy in a public
venue, then sent her a $250 bill for the call.
More likely is that she actually doesn’t have a lawyer on speed
dial or her SIL, the real estate attorney, rolled her eyes and
politely ended the call.

Or hopefully she'll end up with an ambulance chaser who'll
string her along and end up with a beach house on her dime.
A more likely scenario is the public will somehow find out who
she is and it won't be pretty.

Is it wrong of me to hope that the people who shot the video
took it to mall security or the police and the woman gets a
citation for interfering with a service animal?

Yep! Kids look to the grownups to see what the proper reaction
is.
Of course the child would be disappointed, but a smart mom would
be ready to coach her through that--acknowledging the
disappointment, explaining the reasoning, and insisting that the
child figure out how to handle the disappointment without being
rude to everyone else. And also saying, "This level of
disappointment is inappropriate for the situation."

In the area I work in, are a few people who train service dogs.
They come into our store often, and because they want the dogs
socialized, we get permission to love them. I have yet to see
someone approach the dogs and pet them without asking.
One night DF, granddaughter and I went out to eat. The
restaurant was really busy. DGD and I were sitting on a bench
close to the door, when one of the dogs that had frequented our
store came through. My granddaughter went to pet him. I put my
arm around her, and told her he was working and we couldn't pet
him. The trainer thanked us. My granddaughter asked what I meant
by working, before I could explain to her what he was doing. She
was only 4, and listened to me as I explained what working dogs
were, and what he was being trained for, and what his job was
going to be.
That woman missed a HUGE teaching opportunity for her daughter.
She instead taught her, that if something didn't go her way, to
throw a huge tantrum, and make it all about her.
I had a lady come into the store once, with a German Shepard. I
stayed back, and asked her about him. She said she suffers from
severe anxiety, and he helps her not completely lose it. He is
also very protective of her as part of his job. He was sitting
quietly, as I was talking to her. Some very loud kids walked by,
and he stood up, to get between her and them, and she corrected
him. I told her, he was doing his job, those kids bothered him,
and he wanted to be prepared. She said she didn't notice them.
