So here is my plan! I am trying to make sure there is something
for everyone, even if they do not eat pork, shellfish or cheese.
I labeled these items below with little letters. Let me know if
you have any thoughts about the menu below. We will keep the
items with pork and shrimp separate from the other food.
I have friends that had already offered to help, and one offered
to come over Saturday morning for 3 hours, too. She's super fun
so we will enjoy this.
Menu:
(c), (p)Charcuterie platter - a friend had already offered to do
this and she does an amazing job
Vegetable Tray with dip - another friend already offered this
Guacamole or Hummus - a friend offered to make
Two types of dates: (c) cheese stuffed and (p) bacon wrapped
(s)Shrimp and cocktail sauce - purchase Friday and prepare
Saturday AM
Caprese Skewers - buy ingredients Friday and put together
Saturday AM
Mediterranean deviled eggs - make Saturday AM
(p)Meatballs - already made and they are fantastic! Birthday guy
wanted to make these himself so we did that on Sunday and froze
them
Red Sauce - he made this last night and we will make more
tonight
Penne Pasta - we will make on Sat
Macaroni and Cheese - friend is making and I am eating a sample
now. It's delicious!
Also, one Serving of Steak Diane in case of Uncle Rupert ;D
Cake - ordering from grocery
Fruit - ordering from grocery
Cookies - awesome bakery down the street.
The cookies are the one thing that I am a little bummed about.
Neighbor makes these amazing little brandy snaps that I love.
But the Italian bakery also has great cookies.
Two other things I might make if I have time are:
Cheese Straws. My mother gave me a great recipe so barring other
issues I will make these tomorrow night.
Little cups with vegetables and some kind of sauce. Because I
have the cutest little plastic individual cups and I want to do
something with them.
But I also thought about putting two shrimp in each with the
cocktail sauce in the bottom.
Other than this above, liquor and other items for the bar needs
to be purchased and cocktail menu typed up. My fiancé is
handling that with another friend.
Thanks for reading!

That sounds doable and a very nice menu.
Would love your recipe for cheese straws when you get a free
moment; no rush!

Everything sounds delicious, and if Uncle Rupert doesn't come
he's really going to miss out on a great night! I'm impressed
you were able to pull all the food together at the last minute.
If you like working with filo pastry sheets, and you don't want
to have to make and roll out pastry for your cheese straws, I
made up a recipe for Thanksgiving (because I forgot to defrost
my puff pastry in time to use it) that was a huge hit. These
were really fast and easy to make (would be even faster if you
had someone to help by brushing on the melted butter). Cut filo
into pieces about 8" wide and 10-12" tall. Brush one sheet with
melted butter, or a mix of melted butter and olive oil. Spread
out a heaping teaspoon of grated cheese (I used a mix of
Parmesan and cheddar, and mixed them with some garlic powder and
zatar) near the bottom of the filo sheet, about 1" up from the
bottom and about 1" away from each side. Gently roll the bottom
of the sheet up to cover the cheese; roll tightly 2-3 times.
Fold the sides towards the middle about 1", and continue rolling
tightly. Place on a parchment-covered cookie sheet, seam side
down, about 1/2" apart. Brush with melted butter as you place
each one of the tray. You can do this part 1-2 days in advance
and keep them, covered with foil, in the refrigerator. Bake in
a preheated oven (350 degrees) for about 10 minutes, or until
golden. Eat as soon as possible, as they are best while still
hot/warm.

This sounds perfect!!! And so is your timing. I was just
logging in to post the recipe I have, but I love this one and I
do have some zatar on hand.
Lilac, the recipe above is similar to the one I have - it was
based on pie crust dough.
Definitely using this one above from Garden Gal.

For fun, here's what I was previously planning to use - it's
from a cookbook I have dated 1949. I get a kick out of these
recipes when I see things like "cookie tin" or "Cheese ring."
Anyone know what a cheese ring is?!
Cheese Straws
(From pie crust dough)
Out of Kentucky Kitchens by Marion Flexner
Make up the pie crust recipe (page 201). Add 1/2 cup grated
cheddar cheese to the dough. Roll out very thin according to
directions given for regular pie crust. 1/8 -1/4 inch. Cut in
1/2-inch wide strips and twist before baking on ungreased cookie
tin. Also cut out some rings of dough with the doughnut cutter.
Bake the rings and twists in a hot oven (450) until
golden-brown, 8-12 minutes. Remove from stove and serve with
soup or salad. They make an attractive tidbit when several
sticks are placed through a cheese ring on the plate on which
they are passed. One-half teaspoon of paprika added to the
dough will give it a very pretty pinkish cast.
*The pie crust recipe is just a pretty typical one.

For pure indulgence, I recommend fried mac and cheese balls. It
goes well with Italian food as an appetizer. Or is that too much
pasta? (Not in my world ;))
[/quote]
I wish we could manage these but will save them for another
time! My AMAZING boss offered out of the blue to make me two
big trays of mac & cheese when he head about the food situation.
He's not even able to come to the party. Have I ever said he
is less than a perfect boss on this site? If I ever do, tell me
to knock it off!
In other news our cocktail list:
Manhattan
Gimlet
Old Fashioned
Daiquiri
My fiancé has been making those big square ice cubes for weeks!
;D
We will have the ingredients to make these and other basic
things, red and white wine, a bit of beer, plus plenty of
non-alcoholic drinks and (non-bottled) awesome city water.
(Talking about that in the other thread about safety. My little
city has GREAT water!)
Tonight I need to finish my grocery list, and get to bed at a
reasonable hour. Tomorrow is going to be interesting because in
addition to this, it's Month End and work can be hectic. Plan
is to work half day, pick up glassware, grocery shop then a
friend is coming around 6:30 PM to prep and cook what we can. I
can do this, right?
And no clue what I am wearing yet.

When referencing the cheese ring in the directions for serving,
I think they talking about the ones that are cut out using the
doughnut cutter.
