For pure indulgence, I recommend fried mac and cheese balls. It
goes well with Italian food as an appetizer. Or is that too much
pasta? (Not in my world ;))

Do you have many vegetarians/vegans coming?
If you want to add a soup, how about doing shot glasses rather
than bowls? A small portion of a creamy soup could be easily
drunk and cuts down on utensils.

I didn't notice any cheese on your menu so I thought I'd suggest
a couple of ideas.
If you want something sort of cool and fancy, Brie en Croute,
which is essentially a round brie topped with fruit or jelly and
nuts, wrapped in puff pastry is simple to make but delicious.
You can google for the recipe.
Or, if you just want something super easy and always popular,
buy 3-5 chunks of different kinds of cheeses and just put them
on a cutting board, each with their own knife, and label them.
People love this.

A meat and cheese platter was first up on her list.

If bacon is being cooked anyway, it is delectable wrapped around
pimento-stuffed queen olives. A bit salty but quite a treat,
I've had non-meat-eaters break their own rules to have a few.
Unless you are getting specialty bacon from a food-supply house
or butcher, the Oscar Mayer center cut is thin and less fatty; I
cook it in the micro till still limp, wrap it around the olive,
skewer with a toothpick and before serving, broil to finish the
bacon.
Now I want some! :D
These sound terrific! Never had them but I think we might half
these + half dates.
Good! Hope you and your guests enjoy!

Never too much. I will talk to neighbor about this. I'm
definitely having these or something similar at my wedding. :)

You're getting a lot of really good suggestions here. I agree
with more of a finger food type of fare due to lack of seating
and juggling plate/drink/utensils being a bit problematic. But
it sounds like you're looking into the tall tables? This is an
excellent idea.
Adding to your menu planning, just some thoughts:
While you're bacon wrapping LOL, what about bacon wrapped water
chestnuts?
HTML https://www.geniuskitchen.com/recipe/bacon-wrapped-water-chestnuts-33330<br
/>. . . I do not soak the chestnuts in soy, don't think it's
needed at all. Wonderfully sweet and crunchy.
I really like this for a refreshing bite: Mellon squares with a
leaf of basil wrapped in Prosciutto. Honeydew and cantaloupe
mellon work well for this.
Chilled shrimp with cocktail sauce.
What about some small dinner rolls to go with your meat/cheese
tray for small sandwich fixings.
For your asparagus & dip -- I've seen this at an at-home wedding
where the asparagus was matched with celery, carrot, and
cucumber sticks served standing up in small plastic cups with
the dip on the bottom of the cup. Very unique, individual
servings.
Just my 2cents worth . . . sounds like it's going to be an
awesome party! ;D

Unlike the Spanish Inquisition, I always expect a big problem
when I’m throwing a party.
I got the call this morning...The lady that was making all the
food is down with a cold.

Oh no! When's the party? Can you call a local Italian place and
have them cater? Or at this point, anyplace that caters at a
short notice. Even our local grocery store deli can put together
a nice spread of chicken and giant sub sandwiches plus sides.

Party is Saturday. I’ve changed the menu slightly and have it
all sorted out now so that I can do it with the help of a few
friends.

Please share the logistics of how you sorted it out . . . that
must have been some scrambling!
Also, if you wouldn't mind, please share your final/adjusted
menu.
Thanks!
