I pin heavy tinfoil to my couch; it's another from the list of
'things to deter cats.'

Ditto to the double sided tape recommendations. They sell it in
pet stores, either on a roll (like a lint remover) or long
strips. It has really helped me with two cats who were couch
scratchers.

get a squirt gun and spray water on him every time you catch him
doing something he shouldn't be doing. You may need more
patience though!

DH and I tried the squirt gun with our kitty, just to find out
that we own the only cat in the world who likes being sprayed
with water! After a couple times of trying it without any real
results, Frankie just turned his head and caught the water in
his mouth. DH and I looked at each other and said, "Well,
what's the next brilliant idea?"

Different scratching posts will attract different cats. Spencer
is a tall cat, so he likes something relatively high, but they
tend to be tippy. Drs Foster and Smith have a nice post with a
very wide base and a sisal rope covering. He also likes the
sisal part of his cat condo. But he ignores shorter posts.

Yes!
I think 8 is NOT too old to switch to a scratching post. Get a
tall one, w/ a big platform, and set it right at the corner of
the couch where he was scratching. So he will see it at that
same time.
I successfully transitioned my first cat away from the Haitian
cotton sofa arm (really fragile to cat claws!) and to the post
(which was rope-covered), and he never bothered the furniture
again.
I have one like this, but the top isn't carpeted.

I think this is mine

Yeah, it is, because I have this platform for the top

My scratching post is da bomb! It's been through three cats, and
it's probably about time to replace it, because the sisal is
getting fuzzy.

Hahahaha. Same with my Serenity. She doesn't try and catch it,
but she does look up, as if to say 'is it raining?' and then
continues doing the bad thing. I've even splashed much larger
amounts on her and nothing (other than her giving herself a
really long bath after she has moved on from doing the bad
thing).
She is really averse to any sound of metal banging or rattling
(Mr. S. once pulled the cutlery drawer out too far and it
crashed to the floor while she was near the kitchen), so I
rattle the spoons or stainless steel bowls to get her to stop
doing bad things.

Mine doesn't care for when I rattle my keys. A similar option
would be rattling a couple of coins in a soda can.
