       The only time I serve a veggie tray twice is New Years Eve and
       then New Years Day dinner. We hosted both.
       Otherwise I throw the leftovers in individual zip bags and
       freeze them for soups. We make a lot of soup, often without a
       recipe. I never even bothered with the blanching recommended.
