My DS's BF is moving to another state tomorrow. He's requested
Red Snapper Veracruz, calabicitas (corn/squash), and black beans
and rice. I have most of it prepared, just waiting for them to
show up to but the snapper on the grill.

Dinner: Orzo pasta salad with roasted veggies.
Dessert: Caramel ice cream with chewy/soft caramel chunks.

Yum is right! One of my favorite pasta dishes.
Tonight is a Bacon, Gruyere and Squash Frittata.
I do not recommend this recipe. It ended up being very bland.
We are having chicken parm patties and a side salad tonight. For
the parm patties, I'm using ground chicken, mixing in my
preferred herbs and seasoning and then a little it of bread
crumbs and an egg. After making into patties, I'll saute and
then top with marinara and provolone in the oven. So much easier
than making real chicken parm and I don't have to worry about
drying out my chicken cutlets.

Fresh tomatoes and a cucumber from the garden, sliced and
quartered. Add a can of tuna and a bit of mayo. I look forward
to this meal every year.
I know I can make it in the winter, but there's nothing like
fresh picked from the garden to make this tuna salad oh so
delicious. ;D
