I've never used almond flour for sauces because I assumed it
wouldn't work. I'm not supposed to use regular flour because of
my hypoglycemia, and that makes finding good sauce recipes
difficult. Would you mind posting your recipe? I would love to
try it.

Growing up, we used to thicken sauces with cornflour [maize
flour] or arrowroot, both of which are gluten free - do you use
those? These were the type of sauces where something was cooked
in a liquid, and then thickened to make a sauce around the
something, but I'm pretty sure I've made just a sauce with
arrowroot [I know I do for piccalilly], and I use cornflour in
making possibly the best sauce of all: custard. ;) ;D

Asian soy/ tamarind glazed braised pork steaks
rice( to go with meats juices)
Bean salad
Roasted cabbage
Take n Bake Italian bread loaf w/ butter
Dessert will be whatever everyone chooses from what I've made
lately:
Brownie cupcakes
Strawberry Meringue puffs/cookies
Chocolate drops (w/ either rice crispies a la Nestle Crunch bar,
or with fruit and nuts like a Chunky Bar) about the size of a
quarter.

Liverwurst and tomatoes on soft rye bread slathered in mayo.
OH.So.Yummy.
It's just me, indulging in some favorite foods, without having
to cook.

Leftovers from my favorite Italian delivery place . . . chicken
tortellini with alfredo sauce mixed with a side of sirloin
stuffed mushrooms. And a bit of salad.

That sounds really good.
Tonight I had the 3rd and last round of leftovers of meatloaf,
macaroni & cheese, and corn.
Mom and Dad want Chinese from their favorite takeout place, I
wasn't in the mood for it, but I did have them get me a Hot &
Sour soup for another time.
