       We did roasted vegetables with allioli for Christmas dinner, and
       we always do enough so that Boxing Day dinner is leftovers with
       raclette cheese [basically molten cheese poured over them, just
       a lot more faff!] - yum!

       It's finally looking like spring. We have leftovers from last
       night: egg salad sandwiches, asparagus, sweet potato puffs,
       pickles, and olives. Also, these absolutely amazing lemon
       cookies that one of our local vendors sells at the farmers'
       market (which will be moving outdoors again in a few weeks.
       Yay!) ;D

       Tonight I tried substituting shredded cabbage for bean sprouts
       in a pork stir fry. (I am currently avoiding bean sprouts due to
       gout concerns.) I used onions, garlic, salt and pepper, Kitchen
       Bouquet, a cubed cooked pork chop, and the cabbage. Success!

       Dinner tonight was okra stew and bread.  It was my first time
       making the stew and it really turned out well!

       Hi Peony -- My DD#2 made something similar and it was
       oh.so.yummy! It's called Egg Roll in a Bowl. I [s]told[/s]
       politely asked her to put it in her "Keep" list of recipes.
       Ground pork
       Cabbage
       Shredded Carrots
       White onion
       Soy sauce
       Garlic
       Sriracha
       Powdered ginger
       Green onion
       Sesame seeds
       Brown the pork, add and saute the rest of the ingredients,
       except the powdered ginger, green onion and sesame seeds. Those
       were added at serving time (I'm not a fan of ginger so I didn't
       add it). Serve on a bed of riced cauliflower.
       DD#2 didn't give amounts for ingredients because, according to
       her, "It's all to the taste. You like more carrots? Put them in.
       Less sriracha? Don't add so much."
       So glad your meal was a Success! Just thought I'd throw out a
       few other ingredients you might like to try adding to your yummy
       dish. ;)

       I’ve never done egg roll in a bowl, but I did learn how to make
       egg rolls recently. If I have leftovers of something, but not
       enough for a full mean, I use it as egg roll filling. They have
       become a fan favorite in my house and fun to make. I’ve used
       beef and broccoli, shepherds pie, chicken teriyaki, and taco
       casserole.
