The fact that it is someone different collecting than the one
either emailing or having the original idea isn't wierd to me,
in my workplace it happens a lot - more so because we work
shifts and out and about so it's usually the one person who is
in the actual unit the most who ends up collecting money or
passing round a card to be signed
However I do feel the back story is important here

So why isn't Joe "Crazy Joe". He seems to be instigating or at
least facilitating this idea of getting gift cards. It Carol's
text to you is factual in that Joe instigated the idea, it
sounds like he is pushing her to agree and using her to doing
       the collecting and footwork.
I'd be responding to Joe with a reply to all "Joe, I am
uncomfortable giving gift cards to the trainers. I will not be
donating to the gift but will be contributing to the potluck."
Your training class probably just needs someone to step up to
       stop this idea.

Unless I missed it, we don't know if Joe pushed or if Carol
volunteered. Carol even brought up red flags so why is she
       agreeing now?
Too many questions. Too many people/things the OP find
unpleasant. Too many headspace. The OP should just stay out of
it and go about her own business.

I think Carol is "crazy" (and not Joe) because she's already
done/said some things that have rubbed the OP the wrong way (per
her co-worker thread). If Carol wasn't part of the situation, I
think giving a gift would seem less off.

I think maybe a "send off" might be a better idea (no need for
gifts)...have a potluck afternoon break and people could bring
       in cookies.

In the initial post, Carol said Joe brought up the idea of gift
certificates and then Joe sent the email to everyone else. If we
believe Carol's account is factual, then that implies to me that
       Joe was the instigator.

To answer some questions. Carol is new just like me. Today she
stopped me in the hallway and told me she had spoken to a
manager and the manager said monetary gifts are against company
policy and are taken very seriously. Carol said the manager
suggested something like a fruit tray or a decorated big cookie
with thanks on it. I just said ok.
So when we were leaving today, I told her, I will give you the 5
bucks towards the food gift. She said, oh no, we aren't doing
food. One is getting a tshirt, one a covered travel mug and the
other one anything she can find regarding a sports team he
       likes.
The trainers work for the company and are not outside employees.

I really don't think any of this is Joe's idea, I think she
presented the idea to him and told him to send the email.
She really thinks she is the cream of the crop. Her FB posts
talk about about how great she is at her new job and post things
that are simply not true. The things she says about someones
race and lifestyles are way out of control.
I could say some of the things she says to me, but they make me
so sick, I can't. I really need to tell her how disgusting I
find her, but at this point I can't because it would come off so
       wrong.
I will tell you about a text a few weeks ago. She was
graduating with her bachelors. She is in her mid forties. I
was happy for her! Good for her! A mother of a young daughter
pursued her dream. Way more motivated than I am.
She had complained to me about how evil her mother is and that
she couldn't stand her and her and her husband couldn't wait to
move out of her parents house.
So, on her big night, I texted her with congratulations and so
proud, good for you. I also said, I hope your mom was on her
best behavior. She texted back that her mom did not even show
       up.
A few hours later, I got another text, that said hey babe, sorry
I missed your call. Mom, child and I were out celebrating. I am
so happy my mom came to the ceremony! We are leaving to come
home in the morning! Right after that text was, sorry, that was
       not for you.
Anyway, we got our team assignments and we are not on the same
team. So, hopefully that will end all interaction. Then I will
       unfriend her.

She does sound unpleasant, but this particular instance sounds
like Jerk Eating Crackers to me. Even you don't seem to actually
be against the idea of chipping in a few bucks for an allowable
thank-you gift, just that you have to interact with Carol to do
       it.

I did say I would pitch in for a food gift. We are having a
potluck anyway. Now she is back to material gifts.

Why are you giving CC so much headspace? Just tell her you
aren't able to contribute to a monetary/material gift (or better
yet, just ignore the email) and be done with it.
