Re: Can we talk cheese again?

On the subject of stinky cheese, a fearless researcher of school
lunches worldwide has taken the trouble to hunt down the legend
that it is illegal to take epoisses (a famously smelly cheese)
on the Paris Metro, and obtain an authoritative rebuttal from
the representative of the epoisses producers' association, along
with advice on how to wrap your cheese to render it inoffensive
to your fellow-travellers.

***History tidbit. this area of NYS was the dairy capitol of
the US even before the Revolutionary war. This is where a board
set all dairy prices and healthy dair standards way back when.
That is why mascot is wearing tri-corner hat. :)

This is a story that takes place in S.S. Pierce (the Boston
equivalent of Fortnum & Mason).
Resplendent in her trailing lace dress and feathered hat, a
Boston matron enters the dairy department. She taps her cane on
the floor and announces, ‘Cheeses!”.
A floorwalker hurries oven and, as diplomatically as he can,
cautions, ‘Madame, here at S.S. Pierce we do not take the name
of the Lord in vain’.

DH and I will be in the Wisconsin Dells and Madison area for a
couple of days next months. Cheese shopping is high on the list.
[/quote]
In Madison, go to the Dane County Farmers' Market on Saturday.
Stop at Farmer John's, Bleumont Dairy, Brunkow, and Forgotten
Valley.
Heck, you can eat a pound of cheese via samples around the
square. Just try everything!
And don't forget the cheese bread from Stella's. ;D

Thanks for the recommendation - unfortunately, we won't be there
on Saturday. :-\ I'm sure there are some shops we can find,
though.

Fromagination on the Capitol Square. There is also a Wednesday
Farmer's Market. It is much smaller than the Saturday market.
There is a Carr Valley store in the Wisconsin Dells. Carr Valley
only stocks their cheese but they do have sheep, goat and cow
milk cheeses. Also, Metcalfe's, Woodman's and Brennan's Cellar
are grocery stores with good cheese selection.

I didn't know how little I knew about cheese until I read this
thread.
I live near Beechers flagship store which I think is pretty over
rated even for a local cheese but it is fun to watch them make
it from the street.
The French wine bar near me does some good cheese. One time I
got a really great one but unfortunately couldn't remember the
name. I always go in and ask for their runniest cheese but so
far I have not been able to find it again..
Off topic they also bring their butter from France and it is by
far the best butter in the world. I usually just eat the bread
and butter with a knife and skip that pesky bread.

Also, Woodman's has a section devoted solely to Wisconsin
cheeses. (I hear it's produced in other states, also. ;))
