How to best present/bake chicken tenders . . . UPDATE #4
By: jpcher Date: December 27, 2024, 9:23 pm
---------------------------------------------------------
DD#2 and her new BF are hosting NYeve dinner with one other
couple invited.
The menu:
-- Homemade spinich/ricotta/parm ravioli with brown butter/sage
sauce
-- Roasted asparagus and tomatoes
-- Homemade sourdough/garlic rolls
-- Salad
-- Breaded chicken tenders
Since DD#2 has never made homemade ravioli before, she wanted to
do a trial run. DD#1 (who flew in for xmas as a surprise to me!
YAY!), DD#2 and I spent the afternoon in the kitchen (such
fun!). It's a good thing we did the trial run because DD#2
learned a thing or two.
We didn't do the bread, salad or chicken. But the ravioli, sauce
and veggies were awesome.
During dinner DD#1 said "I don't think you should bread the
chicken. I mean that's kinda like serving chicken McNuggets with
this elegant meal. It doesn't seem to fit."
We brainstormed for a while and none of us could come up with a
good way to bake the chicken that would fit the rest of the
meal.
Do you have any thoughts on how to bake chicken tenders that
would elevate the elegance of this meal? Any ideas would be
appreciated. Thanks!

Oh my, no responses. All I can think of is when DH & I have Bar
B Qs in the summer we serve chicken breasts. After the 1st time
and I saw how much was actually tossed out uneaten I cut the
breasts into small pieces. Everyone could have as much as they
wanted but not to throw out good food. I am NOT saying for you
to serve chicken with Bar B Q sauce but rather small pieces.
I don't eat a lot of meat and the ravioli you described sounds
scrumptious.
Another idea--what about ground chicken turned into meatballs
with the ravioli? And a brightly coloured toothpick in each
one?

How about something like this:

Still (lightly) breaded, but more elegant than just serving them
plain.

I googled "fancy chicken tenders" and one link is below:
The author wrote her kids love them but I think the picture
looks nice enough for a dinner party.

Oops! Sorry. Late to the (NYE) party but I just saw this post
:P. Oh well, maybe for another party.

We have a winner! ;D
I sent this on to DD#2 and she said it was wonderful. Easy to
make, paired very well with the rest of the meal and was
delicious! She said this recipe is a keeper.
DD#2 asked me to thank you very much!

Rose Red -- the recipe you sent sounds yummy as well. I think
I'll have to give it a try sometimes. Thanks!
Rho -- I suggested meatballs, but DD#2 thought that might be too
much work. Appreciate the thought anyway!
