       hopefully Sam has learned something!
and I hope they have a good meat thermometer.
Maybe that’s a good Christmas gift for him—a meat thermometer
with a probe, so you can put it in the bird, in the oven, and
wait for it to beep at you.
I will say that I now use my probe thermometer for candymaking
       too!

We have probe thermometers we use in our smoker outdoors. So my
daughter decided to try one in the oven for the turkey and it
       worked great.

Well, I’m very late to the party! I’m just chiming in to say
that if you’re bringing a roast turkey, cook it at your house
and cut it up before packing it to bring. I’d make the gravy,
       too, and pack it separately.
I know people like to admire a whole turkey. But it’s a nuisance
and a mess to carve it at the table, and it gets cold. And
bringing it to another house? Please.
In fact, I now have the butcher cut my turkey into a few pieces
and I cook it that way. It cooks faster, and you can take out
the white meat before it gets dry while the dark meat is
finishing. I tried that on advice a few years ago and never went
       back!
