       Oh! There's a name for those potatoes! ;D
       I used to do these on the grill. It is a bit time consuming, but
       the end result is delicious.
       You can use whatever "stuffing" you want, but make sure to chop
       the stuffing bits finely so that it gets stuffed in between the
       slices instead of just piled on top.
       I started by adding just a dab of butter between the slices,
       some garlic powder, salt & pepper. Maybe some parmasean. Then
       wrapped them individually in tin foil and let them bake on the
       grill until they were about 1/2 way done, which made it easier
       to open the slices a bit and add the stuffing between each
       slice. (I bet it would be easier in the oven, no need to open
       and rewrap the tin foil).
       I used things like mushrooms and pre-cooked bacon or finely
       chopped browned onions. Things like cheese or green onions (if I
       didn't use the browned onion) I would add when the potatoes were
       finished cooking. The potatoes were hot enough so that the
       cheese melted enough prior to serving.
       The beauty of these potatoes is that you can use any stuffing
       that you like, be creative! AND it's like a baked potato with
       everything, but instead of all the stuffing on top, it's melded
       within each slice. A tasty bite all the way through.

       Sounds good! I've never used canned potatoes. Never even knew
       they were a thing!

       I bought a Hasselback potato slicer a while back and use it to
       make these-

       Oh, you just brought back a memory for me!
       My dad was a school Principal and Superintendent for many years.
       He unfortunately was a bit hated by the school cafeteria staff.
       Even thought this was the 70's, canned food products were very
       much the norm. My Dad had a habit of going into the cafeteria
       and providing "guidance" on their meal prep. (He instructed all
       newly hired staff on the "proper way" to make cornbread)  Canned
       potatoes that were just warmed up was a great irritant to him so
       he was always making them add bullion cubes, a bit of mustard
       and fresh dill that he'd bring from home to make them more like
       german potato salad.
