       Suggestions for a casual bbq that grew . . .

       If you've been on our last board some of you might know that my
       DD#1 is moving to far-away state for a great job that she
       accepted after finishing her masters degree.
       I was planning on throwing her and her BFsam a family-style
       going away party which is happening this next Saturday. Family
       obligations arose . . . BIL & SIL might be going to Texas due to
       my their daughter possibly giving birth at that time. They
       responded "Maybe." Perfectly understandable. Other SIL & BIL
       have been on vacation, so when I sent out the invites I knew I
       wouldn't hear from them until this week. One Gma recently broke
       her leg and won't be able to attend. The other Gma/Gpa came two
       weeks ago for the bday celebration and won't be able to attend
       this coming weekend due to other obligations. Another Niece and
       her husband along with other cousins haven't responded yet.
       I asked about her invite list a few weeks ago and she responded
       "I'd like it to be just family" but with the slow/non responses
       from family, DD#1 told me today that she thought nobody would
       show up so she and her BFsam invited a bunch of their friends .
       . . which is fine with me.
       But now I'm stuck with what to serve maybe 30 people instead of
       the 10-15 that I was thinking of. I originally thought of wings
       on the bbq, potato salad is a must and a few appetizers.
       Do you have any thoughts on what else for a main (instead of the
       wings) I should serve? Other app choices would be greatly
       appreciated.

       Congratulations! You must be so proud of her!
       I'm a self proclaimed terrible cook, but shredded bbq beef on a
       bun is quite popular here and simple to make.
       I hope your day goes smoothly and is filled with fun.

       Bbq some corn, add a heap of skewers with a mix of meat/veg or
       fish/veg that you can prep in advance and cook as needed,
       sausages and caramelised onions in slices of bread (Aussie style
       - normal sliced bread, onions I do in the slow cooker the night
       before, and bbq sausages with the bread folded in half on the
       diagonal)

       Healthy(ier) Buffalo Chicken Dip. Can be made in a pan, or for
       larger batches, in the crockpot.
       1 batch:
       4 oz low fat cream cheese, softened
       8 oz fat free sour cream
       1 tsp white wine vinegar
       1/2 cup blue cheese crumbled (my family isn't fond of blue, so I
       substitute a shredded blend, like colby jack or 4 cheese
       mexican)
       1/2 cup buffalo sauce of choice (I use Franks Wing Sauce)
       1 lb (14 oz cooked) shredded chicken
       combine all but chicken in the pan on medium heat till
       thoroughly mixed. Add chicken a bit at a time, stirring it in.
       Once all items are combined, cover and simmer on low heat,
       stirring occasionally. In a pan - 45 minutes. In the crock pot,
       3-4 hours on low.
       I often add a little extra sauce or cheese, but that's a
       personal preference.
       Serve with tortilla or multigrain chips, celery, or even
       broccoli. Goes well on baked potatoes and on top of burgers.
       Will keep in tupperware in the fridge up to 6 days.
       ETA: this has also been used as a main meal for my family,
       especially in the summer.  For the amount of people you're
       looking at having, I'd make at least a double or triple batch,
       both of which are easiest to make/keep warm in a crock pot.
       Perhaps also offer some summer fruits, watermelon, pineapple,
       oranges?

       ^I can vouch for this dip.  My housemate made it several months
       ago for a party, and I was yukking it up that a sour cream dip
       with chicken in it was ghastly.   He left some at home for us
       and I couldn't stop eating it.  He also used Franks, which I
       think matters.
       If you want simple entrees, think crockpots.  Then you'd follow
       a menu like barbecue joints.  Make some pulled pork and/or
       chicken, which is super easy.  Then think of the basics like
       potato salad, corn, baked beans, cornbread and rolls, tossed
       salad, etc.  There's something here for everyone.  Also, you
       could do the salad as a salad bar, to make things easy and
       direct traffic away from the main food.

       One of my favorite good-for-a-crowd hearty mains is a simple
       meatballs in sauce.  I use high quality pre-cooked beef
       meatballs (1 oz each) and heat them in a mix of pasta sauce,
       whole cranberry sauce, and some red wine.  They are easy, stay
       warm for hours, and make fine leftovers.

       Oh. Yes, LadyStark -- I've had that dip, never made it but it is
       delicious! I added it to my menu.
       Aussie_Foodie -- Corn on the cob baked on the grill. Wonderful
       suggestion! but I'm not sure if fresh corn with husks on is in
       season. I'll look when I go shopping. At the least I'll get the
       frozen corn cobs, definitely not the same thing!
       Mikayla -- Great thought, and this is what I was leaning toward.
       One big pot of something, maybe bbq beef or pulled pork or some
       such thing. Then I thought that some of my guests (including me)
       are more on the healthier side of food.
       Talking to DD#2 and a restauranteur chef (she was cutting his
       hair) we decided on this:
       Apps:
       Veggie Pizza
       Pinwheels with cream cheese, corned beef, rolled up in tortillas
       Caprese skewers (toothpick sized with tomatoes, cucumber, motz
       cheeze, balsamic, basil)
       Chicken dip (ala LadyStark)
       The standard cheese/sausage/cracker tray . . . (do you think I
       need this?)
       Main:
       3 types of sliders (ground meat, pressed in a pan and baked in
       the oven)
       -- Beef with mushrooms, onion and swiss cheese
       -- Turkey with pesto, provalone and avocados on the side
       -- Pork with choriso, poblano, onions, enchilada sauce, topped
       with pepper jack cheese
       Corn on the cob (maybe, depends what's available. If corn isn't
       good do you have suggestions for a side veggie?)
       Potato salad
       Either a BLT or Cucumber salad (thoughts on this? DD#2 said with
       the BLT and Potato salad that's two heavy carb salads, I tend to
       agree.)
       Am I missing anything? Should I change/add to the menu?
       I really appreciate your thoughts on this topic. (did you notice
       I'm not doing bbq wings? Should I keep them on the menu since it
       is one of DD#1's favorites?)

       What kind of pasta sauce? this sounds right up my alley.

       Id probably do the potato salad and the a cucumber, tomato,
       avocado salad. Or this is am really tasty salad. Green beans
       with hearts of palm
