Broccoli . . . Fleurettes or stems? or both?

How do you use fresh broccoli? Do you just use the fleurettes?
Throw the stem away? Peel the stem and use the core? If so, do
you cook the core stem differently than the fleurettes? Do you
use the stem whole, without peeling?
Please share your broccoli recipes/stories . . . Do you have any
"yummies" using just the stem?
DD#2 is in the habit of using just the fleurettes and tossing
the stems. I'd like to broaden her horizons on the usage of
stems. Unless, of course, I'm wrong.
Any thoughts would be appreciated! Thanks!

I use the stems when I make a broccoli and cheese soup. I peel
and chop it up and saute it with onions before I add flour.
Then I add the florets for the last 10 minutes or so.
I have steamed broccoli frequently, and I use the florets and a
bit of stem....just not the thick part. I keep the thick stalks
for a friend's dog who loves to chew on them.

We have a sheep on property who will happily eat any vegs that I
want to give her. I mostly use Frozen broccoli though, as it is
just me and I can take out a little or a lot.

I try to buy Broccoli crowns. Fresh brocs get cut into salad.
When I steam them for side dishes I cut up the stems and we eat
them too.

I would never throw away the stem! I very rarely have to cook a
whole lot at one go: but when I do and there's qute a lot of
stem, I sometimes save it and next day serve it as a vegetable
on its own, peeled and cut in fairly big dice then simmered or
steamed. Or sometimes I use it raw in coleslaw, peeled and
sliced fine. But if there's not enough of it to use on its own,
I just peel it and cut it in pieces roughly the thickness of the
floret stems (NB we don't call them fleurettes on this side of
the Pond) and cook them together.

I cut them into "spears"--leaving the florets at the top of the
longest stem I can get (I cut away the end where it starts to
get woody).
The stem is really good! I don't know why people don't eat it.
And this way the stem can serve as a handle.

I use the stems, too, just peeling a bit if it’s tough.
But if you don’t want to, or have too much, you can make easy
and delicious broccoli pickles! Let me know if you want a
recipe.

Funny you should bring up this topic. I always preferred the
stems when eating. But when the kids were young and I was in a
hurry I went to just heads to make prep work quicker. Just a
couple of months ago I picked up stemmed broccoli and remembered
my personal preference so have gone back to eat both when fresh.
For frozen, I still prefer just the fleurettes because I like to
cook the stems a bit longer when sautéing or steaming.
