Corn meal

My husband bought a huge bag of cornmeal I'm looking for ways to
use it before it goes bad.
I hope people have suggestions
one I found online that sounds yummy is cornmeal thyme cake
I have also been diagnosed as pre-diabetic so I'm trying to cut
down on white flour

In a cookbook I have a recipe for corn meal souffle that is a
great meal paired with bake beans. I'm sure there are recipes
to be found with google.
A trusty standby:
Super-sized Tamale 1/8 teaspoon cayenne pepper
1 pound ground beef 8 oz. taco sauce
1 chopped onion 3/4 cup shredded cheese
1.5 cup corn meal 2 Tablespoon sliced
olives*
2 Tablespoon flour
Brown beef & onion, drain. Cook cornmeal & 1.5 cup water over
medium heat until mush is stiff. Cool. Sprinkle flour &
cayenne over beef. Add 1/2 Cup taco sauce plus 1/2 Cup cheese
until cheese melts. Pour corn meal mush into greased 9"
springform pan. Top with beef mixture and add remaining sauce.
350 degrees 30 minutes. Sprinkle olives * optional, chopped
green pepper would be tasty too. and 1/4 cup cheese. bake 5 more
minutes.
Also I have substituted very fine corn meal for white flour
maybe 25% sometimes in other savory recipes.

Do you have room to freeze the extra?
Most grains will keep for a while at room temp, but it is true
they can go bad eventually (the oils in them get rancid). But
freezing often staves that off.

About to show how southern I really am because this is the list
from the top of my head of things I make regularly with corn
meal.
Tamale Pie with cornmeal crust topping
Spoon bread
Corn meal pancakes or waffles
Cheddar cornmeal biscuits
Cornmeal crusted chicken tenders or fish
Southwestern bean soup with corn meal dumplings
Hot water cornbread
Polenta if you have coarse ground cornmeal.
And of course corn bread dressing.
