If I had to take them a long distance, I'd wear earplugs.

I would check that this is legal where you are. I'm pretty sure
this is illegal where I am because you can't hear emergency
       vehicles, etc.

Have you looked into a Feliway type product?
  HTML https://www.feliway.com/nz
its not on this website but I'm sure
they have a collar too. I'd go with the carrier for both of them
       so they can cuddle together.

I haven't looked into much yet.
I'm thinking of getting a soft sided carrier. (Thought a cat
backpack would be awesome, but then realized that a 5+ hour trip
       needs something a little roomier)

put them on the floor of the backseat, in whatever box or
carrier will fit relatively snugly. That way the carrier isn't
swinging around as much at sudden stops--it can't fall off the
       floor.
I might have a box for the litter box and one for traveling, and
then every couple of hours when I stop, move them over so they
can go potty, and set out a little water and food for them.

I wouldn't try to use a soft carrier in the car; I think for a
long trip, that might be kind of hot. See if you can get a fruit
box from the grocery store; they're sturdy and often have
ventilation holes in them, and they often have a lid.
