Gluten free ideas for celiac disease

As a continuation of the weekend hosting thread, I forgot that
my niece and her daughter have Celiac disease. I've already
ordered a gluten free cake from a reputable baker. I need to buy
gluten free buns for the bbq dinner. What else do I need to
worry about? Where is gluten hidden that I might not realize?

You will find gluten hidden in lots of things that you don't
expect, including burgers, sauces, salad dressings, etc.
When I first started having to cook gluten-free for my husband I
checked every label even on products that I didn't think would
contain gluten - some of the products I found it in really
surprised me. The other thing to consider is that some
gluten-free products taste better than others, so it may be
worth checking with your niece whether she and her daughter have
any preferences.

I would check in with them. My co-worker has had celiac disease
for many years. He always brings his own food. He has had
problems with cross contamination too many times. Like if you
toast gluten containing buns on the grill, he would not want
anything from that grill. He also doesn't eat from restaurants
unless it is a gluten free restaurant. I know not everyone is so
strict, but I would ask before you go out of your way.

Ask the person or people with celiac disease. They may or may
not be able to eat foods prepared around gluten-containing foods
or in kitchens that also prepare gluten-containing foods. They
may have preferred brands (since some gluten-free items are much
better than others). Only they can tell you for sure what will
be best for their health.
It wouldn't be nice for you or your guests if you go to extra
trouble and they aren't able to eat anything anyway.

As someone with coeliacs - either grill their food first or put
fresh foil down and then their food on that foil (don't cover
the entire grill to stop air flow)
ASk them for ideas
The things that usually get forgotten - butter (if you've been
spreading normal bread toast with it it's contaminated and can't
be used), don't cut the salad on a board where you've been
cutting gluten before, a lot of dressings and sauces
Don't add salad dressing to the salad - let them be added
afterwards when they know it's safe
