^^^ That's the kind of ending to a story that I love to see!

"Once attendant left I took the paper sign with the sale price
to show the cashier at check out. And I was polite."
Ahhh! This made me feel good. I am glad to know that I am not
the only one who has ever taken a price sign to the register to
politely show the clerk what the posted price really is!
Also, I'm disappointed on your behalf by the behavior of the
fish counter employee. The employees behind the meat & fish
counters where I've shopped the past decade have always been
very gracious to me when I have made requests.
Seriously, I've never had a problem at the meat & fish counter,
but I frequently get to the front registers to pay and find that
one particular store's computer wants to charge me a higher
price than the shelf tag says. The last time there was a manager
standing nearby. I asked him why this kept happening so often.
His reply was that while he was sorry, that store carries more
than ___ (40,000? or maybe 50,000?) items and they couldn't be
expected to have the correct price on every single item.

The first part: Not hard to just hand it back and say "Oh,
that's too much. Can you take some out please? This is closer to
       1 1/4 pounds."
I can't tell the tone from your post (so forgive me if I'm
incorrect), but on first reading it sounds like you used a
demanding tone: "I wanted ONE pound." It'd be pretty hard to get
it exactly right if they are in pieces/filets.
The second part, maybe he made a mistake on the price? Again,
"Oh, I thought it was x amount per pound as per the shelf
label." (Often times, we look at a price and miss the part where
it says it applies only to the lemon-marinated one or whatever).
I know you said he disappeared to the back - wasn't there a bell
you could ring to get him to come back out?
Doesn't sound like "speak to the manager" material here unless
he vehemently denies there's a mistake and you can see the label
       proves you right.
