       jpcher, I've looked up some zucchini recipes if you are still
       interested. Some of them seem similar to what has been mentioned
       here, like an actual recipe for zucchini soup. I'd be happy to
       type some of those recipes here if you would like that.

       Tonight I diced up some zucchini (or maybe it was summer squash;
       I can hardly tell the difference) and roasted it with olive oil,
       salt, pepper, and a bit of red pepper flakes at around 375 for
       15 minutes, adding cumin seeds a couple of minutes before the
       end.  It was good; my son in law, who is a good cook, really
       liked it (enough to take the leftovers).

       I mentioned some stuffed zucchini I had recently. This looks
       pretty close to the recipe they might have used.

       DD#1 once made an eggplant lasagna that was delicious. I bet I
       can substitute zucchini instead of the eggplant. It sounds like
       your casserole . . . I did not think of this until I saw your
       post! Thanks!
       Winterlight -- Soup sounds awesome, but when you posted it was
       too hot for soup. Now that the weather is turning I will
       definitely keep this in mind! Maybe use some tomatoes from our
       garden instead of canned.
       holly firestorm -- Any recipes would be greatly appreciated! Not
       just for me, but for others that read this thread. If you don't
       mind the trouble I'd love to see what you've found. ;D
       Gellchom -- we've mostly been doing this (roasting in the oven)
       for a side dish. Along with the zucchini we add poblano peppers
       and tomatoes (from the garden), onions and asparagus. Topped
       with some parmesan after roasting. I like the thought of red
       pepper flakes . . . will try that next time.
       I still need to try a zucchini bread or cake. Long weekend
       coming up. Maybe I'll give it a go (I'm not much of a baker).
       I can't tell you how many zucchini DD#2 has given away . . . but
       she's picking them sooner so they are not 'bats' and giving all
       of the good ones away!  ::) But that's okay, it's her garden.

       I'm sure you can.  I believe that the Moosewood Cookbook recipe
       gives both versions.

       My mom grows everything under the sun but not zucchini. Well, I
       was taking my daily walk and a house had a box of zucchini with
       a sign saying they grew too much and for passersby to take some.
       We ended up with two. Sliced and fried one up with bread crumbs.
       Haven't decided what to do with the other.
       We joked the next time I walk by, others gardeners will have
       refilled the box.

       Someone posted on our village Facebook group to be aware that
       someone tried to break into their vehicles in the driveway,
       early in the morning.
       I asked if they'd checked the back seats for zucchini.

       Today for lunch I made stuffed zucchini and meatballs with the
       leftover stuffing. (This is a Yia yia, Nanna, Abuela recipe. In
       other words, I didn't measure anything.)
       I made, basically, a meatball mix. About 1/2 chopped beef and
       1/2 ground up Italian sausage. Threw in an egg, Italian style
       bread crumbs, garlic powder, dry oregano, Italian style shredded
       cheese and mixed by hand. Spread olive oil on the bottom of a
       cookie sheet.
       I cut the zucchini in 1-2 inch slices and hollowed out the
       pieces. Filled the zucchini slices with the meatball mixture,
       coated them with a little more olive oil, put them in the oven
       on the cookie sheet for 5-10 minutes (medium or low medium
       heat), sprinkled some more shredded cheese on top and put them
       back in for another few minutes.
       They turned out pretty good. Maybe not as good as the ones I got
       at Giuliano's, but, not bad.
       The meatballs I just cooked on the stove top in some olive oil.
       They also turned out pretty tasty.
