Here’s a great summer recipe that produces juicy, tasty chicken
with minimal effort. Be warned, this sounds like a recipe for
food poisoning but it really works.
       CHINESE CHICKEN
       1 4-5lb roasting chicken
       2 C cold water.
       1-2 C soy sauce.
1/4 C Chinese rice wine or dry sherry
5 slices peeled, fresh ginger root about 1/8 inch thick.
       2 tsp. Five spice powder
       2 Tbsp sugar
In a heavy pot, large enough to snugly fit the chicken, bring
the water, soy sauce, wine, ginger and five spice to a boil.
       Add the chicken.
Bring to a boil again and reduce the heat to moderate.
Cover and cook for 20 minutes.
       Turn over the chicken.
Add the sugar and baste chicken.
Cover and simmer 20 minutes longer.
Turn off the heat, cover the pot and let the the chicken cook
       for 2 to 3 hours.

BeagleBoy made watermelon popsicles. The recipe is easy:
       One medium seedless watermelon, cubed
       1/2 tsp sugar
       1/8 tsp salt
Place all ingredients in a blender and puree until smooth. Pour
mixture into six popsicle molds and freeze until solid (about 4
       hours).
You can also add 1/4 cup of vodka if you want to make boozy
       pops.

       Sounds subversive but delicious, BeagleMommie.
Here’s a wonderful Chinese salad to go with the above chicken.
       CELLOPHANE NOODLE SALAD
This is a ‘seat of the pants’ salad. All measurements are at
       the discretion of the cook.
I nest of cellophane noodles or handful of thin rice noodles.
As much julienned carrots and celery as you wish.
Soy sauce and white vinegar to taste.
Boil a kettle of water and our into a large glass or metal bowl.

Add the noodles and allow to soften.
       Cool and drain noodles.
Toss with vegetables, soy and vinegar.
You may use any vegetables you wish but this type of Chinese
cuisine prefers that all ingredients should be cut in the same
way. The noodles are long and thin. The vegetables should be
       cut the same way.
