       Kale Recipes?

       I have a large amount of kale from my CSA. Any ideas for
       recipes? I love kale with pasta, & kale chips are good, but I'm
       looking for something more, preferably vegetarian. (No smoothie
       recipes, though. I'm pretty meh on smoothies & dislike them with
       most vegetables added.)

       How about a vegan Zuppa Toscana soup? I don't have a recipe but
       there are some delicious looking ones online.
       I've only had kale from Olive Garden's soup so that's what I
       thought of first  :D

       I like kale as a salad: Cut or tear into bite-sized pieces.
       Dress with lemon juice, salt, pepper and high quality EV olive
       oil.

       Anyone have additional suggestion?
       My eye Dr has strongly recommended I eat kale, spinach (I love
       it as salad), blueberries, (things high in a certain vitamin).
       I have discovered I don't like kale in soup.  :(

       Add avocado to the above and massage it into the leaves.
       Sprinkle with feta and tomatoes.

       We have an abundance of kale in our garden. I’ve been roasting
       it in the oven at 445F for about 15 minutes or so with assorted
       vegetables (this last  time with broccoli, carrots cut in half,
       chopped onions, radishes and grape tomatoes), all dressed in
       olive oil with garlic powder, a little sugar, kosher salt and
       black pepper.
       If this sounds interesting I can try to nail down my seat of
       the pants technique a little more precisely.

       I love, love, love this recipe I found in a magazine a while
       back. It really only serves 2-3 because it's so big and puffy
       and really reduces down when cooking.
       Butternut squash and kale torte
       1 T olive oil
       ½ small butternut squash (1 lb), thinly sliced
       1 medium red onion, thinly sliced
       1 sm bunch kale, thick stems discarded and leaves cut into 1-in
       pieces
       salt and pepper
       1 med. potato, thinly sliced
       6 oz thinly sliced provolone cheese
       1 plum tomato, thinly sliced
       ½ c. grated parmesan
       Heat oven to 425.  Oil a 9-in springform pan (we use a casserole
       dish).
       Arrange ingredients in layers, using half of each ingredient in
       each layer:
       squash
       onion, in rings
       kale
       drizzle with ½ of oil and ¼ t salt
       potatoes (use all)
       provolone cheese
       kale
       drizzle with ½ of oil and ¼ t salt and ¼ t pepper
       onion
       tomatoes
       provolone
       squash
       parmesan
       Cover with foil and bake 20 minutes.  Remove foil and back
       another 25 minutes, or until soft.

       We love kale!  I often make it with some or all of vegetarian or
       meat sausage, onions, beans, tomatoes, pasta, cheese, and
       garlic.  But my favorite is this salad by Betty Rosbottom.  I
       saw it in the paper decades ago before kale became popular (in
       fact I believe the accompanying story was about how she saw kale
       in the farmer’s market and asked the seller what to do with it).
       It  became a favorite in our family. My daughter says I was
       ahead of the kale wave!
       I love this salad. It’s delicious, fast, and keeps for days in
       the refrigerator, unlike most green salads.
       2 tablespoons olive oil
       1 tablespoon lemon juice
       2 teaspoons maple syrup
       1 teaspoon Dijon mustard
       1/2 teaspoon Kosher salt
       Scant 1/2 teaspoon red pepper flakes
       1/4 teaspoon freshly ground black pepper
       6 to 8 ounces kale
       1/4 cup golden raisins
       1/4 cup toasted pine nuts
       1.Whisk together olive oil, lemon juice, syrup, mustard, salt,
       red pepper flakes, and black pepper in a nonreactive bowl. (The
       dressing yields 1/4 cup and can be prepared 1 day ahead; cover
       and refrigerate. Bring to room temperature 30 minutes before
       using.)
       2. Remove and discard the tough stems and center veins from the
       kale leaves. [Then cut the leaves crosswise into 1/2 inch wide
       strips to yield 6 cups well packed kale.]  (I just tear it up)
       3. Place the dressing in a salad bowl and whisk well. Add the
       kale and toss to coat greens thoroughly with dressing. [Divide
       salad evenly and mound on 4 salad plates. Garnish each serving
       with raisins and pine nuts.]. ( I just mix everything in a big
       bowl)
       Serves 4

       Marmalade mom if you could give me some details I'd like to try
       it.  Btw my husband won't eat anything with kale.
